Ingredients

Thin cut slices of pumpkin without skin – 10 pieces
1 cup button mushrooms
1 cup sliced capsicum.
1 cup sliced Zucchini.
250 ml Cold pressed canola Oil
3 small fresh chillies chopped.
5 pepper corns
Salt
Herbs – according to your preference. Thyme, rosemary, oreganietc.,

Method:

Heat the oven to 200 degrees 9 fan forced).
Spread the thinly sliced pumpkin pieces on a baking tray and drizzle canola oil a pinch of salt
and pepper and mix until pumpkin slices are well coated.
Arrange pumpkin mixture, in a single layer, on prepared tray. Bake for 40 minutes or until
pumpkin is golden and tender.
In a separate baking sheet place slices of mushroom, capsicum and zucchini and bake it for
15-18 minutes in the pre-heated oven (200 degrees – fan forced)
Let the vegetables cool down once removed from the oven.
Mix all the bakes vegetables.
Chilli oil dressing – Add 250 ml Cold pressed canola oil, 3 small fresh chillies chopped, salt to
taste, pepper corns in a jar and mix well. Drizzle the chilli oil on to the bakes vegetables and
enjoy a healthy meal.
